Gigi’s Apple Cobbler

Glenda Chung Hinchey, who writes a blog called “gigi-hawaii,” shares her simple way of making a fruit cobbler — basically by pouring a batter over cut fruit and baking it.

“I enjoy experimenting in the kitchen, testing my creations on my husband, who craves a little variety in his diet,” she writes. “Happy wife, happy husband. Win-win situation.”

Hinchey says any type of apple will work but she favors the Fuji. “ I just chop it without peeling it, and the outcome is tender.”

• 4 tablespoons melted butter
• 2 cups baking mix (such as Bisquick)
• 1 cup sugar
• 1 teaspoon cinnamon
• 1 egg
• 1 cup milk
• 4 apples, chopped

Heat oven to 350 degrees.

Spray a 9-by-13-inch glass baking pan with cooking oil spray. Spread apples in bottom of pan.

Combine remaining ingredients and pour over apples. Bake 40 minutes.
