Light and refreshing fare for long days of summer

The hottest days are still ahead, but you can stay comfortable, conserve energy and manage your electricity use with simple tips from Hawaiian Electric's updated "Cool Tips" brochure.

To further beat the summer heat, we've assembled some light and refreshing recipes that involve minimal cooking so you can enjoy the long days of sunshine while keeping your cool.

 

Summer Breeze Cooler

4 cups 100 percent cranberry-raspberry juice
1 22-ounce bottle orange-flavored sparkling water
1 orange, sliced into half moons
Mint for garnish (optional)

Add juice and sparkling water to large pitcher or punch bowl. Lightly squeeze orange slices to release some juice, then drop slices into juice mixture. Mix well, serve in tall glasses over ice; garnish with mint sprig if desired. Serves 6 to 8.

Lettuce Wrap

1 head romaine lettuce
1 pound diced chicken or pork
» Marinade:
1 tablespoon vegetable oil
1 tablespoon soy sauce
1/2 tablespoon cornstarch
1/2 teaspoon sugar
1/2 teaspoon salt
» Filling:
2 tablespoons vegetable oil
2 slices ginger, minced
1 clove garlic, minced
1 green or red pepper, diced
1 can (8 ounces) water chestnuts, chopped
2 tablespoons oyster sauce
2 eggs, beaten
2 stalks green onions, chopped
Hoisin sauce for serving

Wash lettuce and separate leaves; set aside to dry.

In bowl, combine marinade ingredients and soak chicken or pork at least 30 minutes; set aside.

For filling: In wok or skillet, heat vegetable oil on high. Add ginger and garlic; stir-fry 30 seconds. Add marinated meat and stir-fry until meat is cooked halfway, about 2 to 3 minutes. Add pepper, water chestnuts and oyster sauce; cook on medium heat until meat is cooked, about 3 to 4 minutes. Add eggs and green onions; stir 30 seconds. Remove from heat.

Lay out lettuce leaves on serving dish and filling in serving bowl. To serve, put 1 to 2 teaspoons hoisin sauce onto each leaf, spoon filling onto lettuce leaf and fold like a taco. Makes 4 meal-size servings or 8 appetizer servings.
