Ma'ili fest to aid youth from coast

Bring the whole family to Ma'ili Beach Park for Sunset on the Beach.

Festivities include entertainment, a marketplace featuring local crafts and artists, a health expo sponsored by the Waianae Coast Comprehensive Health Center and a children's center with rides, games and prizes. At dusk, a full-length feature movie will be shown.

And of course, there will be lots of "ono-licious" food from a variety of local restaurants and food vendors.

Proceeds from the event will raise funds for Valley of the Rainbows, a nonprofit agency that provides monthly financial scholarships for Leeward Coast youth to attend cultural, sports, school, or other education-related activities.

Here, we share recipes featuring two isle favorites, taro and coconut.

Kulolo (Taro Pudding)

4 ti leaves
2 cups grated raw taro
1/2 cup coconut milk
1-1/2 cups raw sugar

Line 8-inch pan with foil and then ti leaves. Combine taro, milk and sugar; mix well.

Pour into prepared pan; cover with ti leaves. Cover pan tightly with foil. Steam 5 to 6 hours or cook in pressure cooker 2 1/2 hours.

Cool and cut into 1 1/2-inch pieces. Serves 16.

Approximate nutritional analysis, per serving: 100 calories, 1.5 g fat, 1.5 g saturated fat, 0 mg cholesterol, 10 mg sodium, 22 g carbohydrate, 1 g fiber, 18 g sugar, 0 g protein

Taro and Sweet Potato in Coconut Milk

4 cups cubed cooked taro
4 cups cubed cooked sweet potato
2 cups coconut milk
1/3 cup sugar

In large saucepan, combine all ingredients.

Cover and bring to boil; lower heat and simmer 10 minutes.

Serve warm. Serves 20.
