Try these meals for hectic days

It's back-to-school time, which means the family schedule is a bit more hectic. To help ease the stress, we're featuring family-friendly recipes that can be made ahead of time and will reheat nicely during the busy week.

Chicken Edamame Meatballs is a good recipe to prepare with the kids -- they'll have fun placing soybeans in the center of meatballs. To save time, leave out the soybeans; the meatballs will still be tasty. Do yourself a favor and double or even triple the recipe and freeze extras for a second meal.

Korean Hamburgers make an ideal potluck dish for sporty families' post-game meals.

CHICKEN EDAMAME MEATBALLS

2 tablespoons soy sauce
2 tablespoons sugar
1 tablespoon mirin
1/2 teaspoon ground black pepper
2 tablespoons cornstarch
1 pound ground chicken or turkey
1 egg, beaten
3/4 cup panko
1 cup shelled edamame beans (soybeans)

Preheat oven to 350 degrees. Grease baking pan.

In small bowl, combine soy sauce, sugar, mirin, black pepper, and cornstarch; set aside.

In large bowl, mix ground chicken, egg, and soy sauce mixture. Add panko; mix well.

Form small flat patties, place one or two edamame beans in center of each patty, and form meatball.

Bake 15 minutes. Turn meatballs over and bake another 10 to 15 minutes or until meatballs are cooked through. Serves 6.

Approximate nutritional information, per serving: 230 calories, 8 g fat, 2 g saturated fat, 85 mg cholesterol, 450 mg sodium, 21 g carbohydrate, 2 g fiber, 6 g sugar, 18 g protein

KOREAN HAMBURGERS

2 pounds ground beef
8 eggs, beaten
10 tablespoons flour
6 tablespoons soy sauce
5 tablespoons sesame oil
5 tablespoons sugar
1 cup chopped green onions
2 cloves garlic, minced
1 bottle (12 ounces) won bok kim chee, finely chopped

Combine all ingredients in large mixing bowl. Form into patties; grill, broil, or pan-fry to desired doneness. Serves 10.

Approximate nutritional information, per serving: 350 calories, 20 g fat, 6 g saturated fat, 230 mg cholesterol, 900 mg sodium, 15 g carbohydrate, 1 g fiber, 7 g sugar, 26 g protein
