~~<p>Today's topic is almonds, specifically almonds in cookies, and comes courtesy of Geraldine Davis, who wants a good recipe for a Chinese almond cookie.</p>
<p>Davis is enamored of the melt-in-the-mouth quality of this light, traditional cookie. The version below is the one baked by the thousands for the annual 'Iolani School carnival. It ran in this space in 2007, but bears repeating as it is easy, reliable and tasty, plus sturdy enough to survive packing and selling.</p>
