Handmade kim chee with regional and family distinctions differs vastly from the bottled products in taste and spiciness

~~<p>For all our love of apple pie and cheeseburgers, barbecue ribs and mac 'n' cheese, the American menu doesn't have one dish that equals the stature of kim chee in the Korean diet.</p>
<p>&quot;Breakfast, lunch, dinner, snack &mdash; it's our basic and best side dish. It's a staple,&quot; said Kimberly Ching, food organizer of this year's Korean Festival, which takes place Saturday at Kapiolani Park. The event will feature a food market, food booths from 13 restaurants, cooking demonstrations and even a kim chee-eating contest.</p>
