Bismarcks top themed menu

For royal watchers, the wedding of Prince William and Kate Middleton is THE supreme reason to pull out all the stops and throw an English-themed party. The menu, of course, is key to success.

Begin with bismarks, also known as Dutch babies and German pancakes. Though this oven pancake isn’t commonly served as a breakfast item in England, its savory counterpart, Yorkshire pudding, is served for Sunday dinner, with leftovers offered with jam for dessert. Use any fruit for the filling; fresh berries are particularly good, but sautéed apples with cinnamon and sugar are tasty as well.

FRUIT BISMARCKS

1 cup milk
4 eggs
1 cup bread flour, sifted
1/2 teaspoon baking powder
Pinch salt
4 tablespoons butter
1-1/2 cups fresh fruit

Preheat oven to 450 degrees.

Whisk together milk, eggs, flour, baking powder and salt until smooth.

Place butter in pie plate or oven-safe skillet. Set in oven. When butter has melted, swirl pan to fully coat the bottom and sides.

Pour batter into hot pan and immediately return to oven. Bake 15 minutes,

then lower temperature to 375 degrees and continue to cook until browned and puffy, another 10 minutes.

Remove from oven. Heap fruit in center. Serve dusted with powdered sugar or topped with whipped cream. Makes 8.

Approximate nutritional information, per serving: 174 calories, 9 g total fat, 5 g saturated fat, 125 mg cholesterol, 115 mg sodium, 17 g carbohydrate, 2 g fiber, 7 g protein
