Foodland has been getting lots of calls from excited Leeward residents about the opening of its latest store at Kapolei.
That day is today, and Foodland will be celebrating with various activities, including demonstrations Friday and Saturday for grilled grass-fed Molokai ground beef, one of the market’s newest products. Demos will run 4 to 6 p.m.
The 36,320-square-foot Kapolei store houses all the bells and whistles of other branches, including R. Field Wine Co., Coffee Bean & Tea Leaf, a pharmacy that’s slated to open in 2013, and adjoining indoor and outdoor dining and sitting areas.
The store also features a self-serve kim chee bar with 12 different varieties of Korean side dishes, or panchan.
The store, at 4850 Kapolei Parkway, is open 5 a.m. to 11 p.m. daily.
Foodland corporate chef Keoni Chang shares a recipe for a local favorite, loco moco, using the Molokai beef and kim chee fried rice, in celebration of the kim chee bar.
MOLOKAI BEEF LOCO MOCO WITH KIM CHEE FRIED RICE
Chef Keoni Chang, Foodland
4 ounces Molokai ground beef
Salt and pepper, to taste
1-1/2 cups kim chee fried rice (recipe follows)
1/2 cup brown gravy
1 large egg
Press ground beef into patty; season with salt and pepper. Grill or fry to desired doneness.
Place the fried rice in a bowl. Place burger on rice.
Fry egg sunny side up. Just before egg is done, pour warm gravy over top of burger. Slide egg on top of gravy. Serve immediately. Serves 1.

KIM CHEE FRIED RICE
Chef Keoni Chang, Foodland
3 tablespoons peanut oil
3 cups cooked white rice, day old, dried out uncovered in refrigerator
2 teaspoons minced garlic
1/2 cup diced kalbi or preferred meat
1/2 cup chopped kim chee
1/2 cup watercress, cut into 1/2-inch pieces
1/2 cup bean sprouts
3 eggs, whisked and fried
2 tablespoons soy sauce (dark preferred)
1 tablespoon sesame oil
1/2 cup chopped green onions
Heat oil in pan. Add rice and toss until hot and golden. Add garlic and toss.
Add kalbi, kim chee, watercress, bean sprouts and fried egg. Stir-fry 2 minutes.
Add soy sauce and sesame oil. Finish with green onions. Serves 4.
