Show support for the folks who support Hawaii’s food system at the "Preservation Celebration" fundraiser, a four-day tasting and workshop event centered on food preservation techniques such as pickling and curing.
The GreenWheel Food Hub event, running Thursday to Sunday, will launch a crowd-funding campaign to raise $15,000 for equipment that will allow the Hub to expand its "GreenGoods" line of shelf-stable sauces, pickles and preserves.
These value-added items are made with surplus and off-grade (imperfect) produce from local farms that would otherwise be wasted.
A GreenGoods food shop will sell the artisan preserves during the four days.
The Hub helps Hawaii residents, especially those in low-income communities, gain access to fresh, locally grown food. Profits help fund such services as equipment to process SNAP/EBT, or food stamps, at farmers markets.

» Shop hours: 4 to 8 p.m. Thursday, 11 a.m. to 8 p.m. Friday, 10 a.m. to 11 p.m. Saturday and 9:30 a.m. to noon Sunday
» "Pickled, Cured, Distilled" (5 to 7:30 p.m. Friday, $65): Taste pickles, jellies, jams, charcuterie from Salt Bar & Kitchen, cheeses from Naked Cow Dairy, paiai from Kako‘o ‘Oiwi and artisan breads from Tante’s Bakery.
» Workshop and demonstration series (Saturday, $40 per workshop or $70 for both): Former Japan resident Nanette Geller will teach how to make tsukemono, or Japanese pickles (1 p.m.). Chef Doug Kocol of Salt will demonstrate charcuterie using Shinsato Farm pig and rabbit (2:30 p.m.).
» Honolulu Night + Market (6 to 11 p.m. Saturday): The event features a "Green Grocer" shop that will offer tasting plates and preserved goods.
» "Preservation Celebration Brunch" (10 a.m. to noon Sunday, $50): Features Tante’s English Muffins, poached Waianae Rainbow Eggs, Naked Cow cheese, Kocol’s bacon, GreenGoods tomato jam and Kako‘o ‘Oiwi taro hash. Plus, enjoy a cup of Waialua Coffee.
