DRIED FRUIT TURNOVERS
1 cup flour
1 teaspoon ground ginger
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1/8 teaspoon ground nutmeg
8 ounces light cream cheese, softened
1/2 cup unsalted butter, softened
1 teaspoon vanilla extract
1/2 cup dried figs
1/4 cup dried cranberries
1/4 cup apples
1 tablespoon balsamic vinegar
2 tablespoons light brown sugar
2 tablespoons heavy cream
1 tablespoon super fine or granulated sugar
In medium bowl, combine flour, ginger, cinnamon, salt and nutmeg; set aside.
In another bowl, using mixer on medium speed, whip cream cheese, butter and vanilla until smooth.
Add flour mixture and mix until just blended. Wrap dough in plastic wrap; set aside.
Roughly chop dried fruit. In small bowl, combine fruit, vinegar and brown sugar, then toss to combine.
Refrigerate dough and fruit mixture overnight.
Preheat oven to 350 degrees. Line two baking pans with parchment paper; set aside. Divide dough into halves. Refrigerate second half until needed.
On a floured surface, roll dough into rectangle about 1/8-inch thick. Cut into 2-inch squares. Spoon 1 teaspoon fruit filling into center of squares. Brush edges with water and fold in half diagonally, and press to seal.
Place turnovers 2 inches apart on baking pans, brush with cream and sprinkle with sugar. Bake until golden, about 20 minutes. Place on wire rack to cool. Makes 40 turnovers.
