WHAT’S COOKING
Gourmet kim chee puts punch in pork sliders
Diners at last week’s Eat the Street food event in Kakaako made note of Nani Kore Food’s tasty offerings, which included bacon-wrapped mochi served two ways. But the company brands itself on offering small batches of gourmet kim chee made with locally grown produce.
This week on "What’s Cooking Hawaii?" Nani Kore chef Victor Jian demonstrates kim chee-based dishes with the help of chef-host Grant Sato.
PORK BELLY KIM CHEE SLIDERS
» 1/4 pound pork belly, thinly sliced
» 2 teaspoons sesame oil
» 4 ounces kim chee
» 1/2 teaspoon soy sauce
» Salt and pepper, to taste
» 4 Hawaiian sweet rolls
» 1-1/4 cups shredded cabbage
» Guava syrup, to taste
» Mayonnaise, to taste
In pan, saute pork belly in sesame oil. When thoroughly cooked, add kim chee and cook 30 seconds, then add soy sauce, salt and pepper.
Assemble sliders: Slice sweet rolls in half crosswise. Spread shredded cabbage evenly among 4 sweet rolls. Add kim chee-pork mixture. Dress with guava syrup and mayonnaise to taste.
"What’s Cooking Hawaii?" airs on KFVE at 7 p.m. Wednesdays and repeats at 5:30 p.m. Saturdays.
