Kalua Pig and Lomi Salmon Summer Rolls
» 8 (8-1/2-inch) round rice paper wrappers
» 3 cups baby spinach leaves
» 1 cup finely shredded purple cabbage
» 1 cup finely shredded carrot
» 1/2 cup thinly sliced green onions
» 2 cups kalua pig
» 1 cup lomi salmon
Fill medium frying pan with hot tap water. Submerge 1 wrapper in hot water until soft and pliable. Remove and place on clean kitchen towel. Layer small amount of each vegetable in center of wrap. Top with kalua pig and lomi salmon. Fold in ends of wrapper and roll tightly. Keep covered with a damp paper towel until all rolls are wrapped.
Slice in half and wrap tightly in plastic wrap. Makes 8 rolls.

Sweet Potato Mochi Cakes
» 1 stick butter, melted
» 4 eggs, beaten
» 1-1/2 cups whipping cream
» 1-1/2 cups mashed Okinawan sweet potato
» 1 (13.5-ounce) can coconut milk
» 1-3/4 cups raw sugar
» 1 (16-ounce) box mochiko (mochi flour)
» 2 teaspoons baking powder
» 1/2 cup shredded coconut
Heat oven to 350 degrees. Lightly coat muffin tins with nonstick spray. In blender, combine butter, eggs, cream, sweet potato and coconut milk. Blend on low until thoroughly incorporated.
Pour into large bowl and whisk in sugar. Add mochiko and baking powder; whisk until completely blended. Pour into muffin tins and top with coconut. Bake 25-30 minutes, or until top of cupcake is golden brown. Makes 24 cakes.
