Goma Tei Ramen is making its own ramen and udon noodles.
Owner Kenneth Siu said he spent several months working with engineers in Sanuki, Japan, to create machines that would mix the ingredients — including flour shipped in from Kagawa, Japan — and cut the noodles to Goma Tei’s specifications.
The new noodles are available at all five Goma Tei locations.
Come September, the company will roll out specialty noodles during its inaugural monthlong Noodle Festival.
The first four flavored noodles to be introduced will incorporate shrimp, scallops, porcini mushrooms and truffles:
>> Sept. 1 to 8: Truffle ramen with shoyu broth, topped with chicken and mushrooms, $19.95
>> Sept. 9 to 15: Shrimp ramen in tan tan broth, $16.95
>> Sept. 16 to 22: Porcini noodle tan tan, $16.95
>> Sept. 23 to 30: Scallop noodle with shoyu broth, $16.95
Future varieties may include tomato, spinach and carrot.
Goma Tei locations: Ala Moana Center, International Market Place, Kahala Mall, Pearlridge Center and Ward Centre.
