For Waipahu resident Joyce “JB” Magbual, deciding what to name her Happy Belly Eatery food truck was easy.
“I wanted customers to leave with a happy belly after they’ve had my food,” the owner shares.
Magbual adds that she has always wanted her own food truck.
“Cooking for others makes me happy,” she emphasizes. “We sell local Asian fusion food. It’s a mixture of munchies and comfort food.”
Happy Belly Eatery offers an array of cuisine ranging from plate lunches to sandwiches and more. Among the choices is the Happy Mix plate ($16), which includes Asian-style breaded chicken with a choice of the chef’s choice house honey Sriracha or the popular house explosion sauce. It also has jumbo shrimp katsu topped with kimchi sour cream sauce.
Seeking more comfort food with an Asian flair? Then opt for the country fried steak ($11).
“We add a secret blend of Asian spices to each batch of chorizo gravy,” Magbual says.
Happy Belly Eatery also features a variety of fry tots, such as chorizo gravy, kimchi, elotes and seasonal flavors. Of all the fried dishes, the “chimichurri steak fry tots ($8) can definitely hold its own against our heavy hitters,” Magbual says.
This mix of french fries and tater tots come with 3 ounces of 12-hour slow-cooked, top-shelf sirloin and a refreshing chimichurri sauce. It’s finished with a drizzle of cool sour cream.
The truck is located in the former Sears parking lot at Pearlridge Center from 10:30 a.m. to 4 p.m. Tuesday-Thursday, unless it sells out of food. Magbual explains that her biz also participates in events in Waikele and at Kroc Center Hawaii.
