The focus of the episode is ulu, or breadfruit. Basic precooking: Wrap whole, unpeeled ulu in foil and bake at 350 degrees for 45 minutes or steam for 1-1/2 hours.
- 1/2 cup small-diced sweet onion
- 1/2 cup small-diced tomato
- 1/4 cup chopped cilantro
- 1 tablespoon minced garlic
- 1 teaspoon salt
- 1 tablespoon lemon juice
- 1 cup ulu puree
- 1/2 cup small-diced avocado
In bowl, place onion, tomato, cilantro, garlic, salt and lemon juice; mix well. Fold in ulu and diced avocado, adjust salt and serve chilled. Serves 4.
