The latest issue of Wine Spectator has recognized George Mavrothalassitis, chef and owner of Chef Mavro, as one of the 11 "most important French chefs working in America today."
The magazine notes that "Chef Mavro restaurant in Honolulu is one of the most acclaimed restaurants in the United States."
Mavrothalassitis is in a select group that includes Daniel Boulud of Daniel, Eric Ripert of Le Bernardin, Pierre Gagnaire of Twist and Hubert Keller of Fleur de Lys.
"My cuisine combines French technique and a passion for wine pairing with Hawaii’s regional influences. Most of the other 11 are cooking more traditional French," said Mavrothalassitis.
