Dinner benefits Bocuse d’Or USA
The cuisine of chef Sonny Acosta Jr., who placed fourth in January at the inaugural Bocuse d’Or USA Commis Competition for young chefs in training, will be featured in Alan Wong’s latest Next Generation dinner on March 28.
Acosta, a cook for Wong’s restaurant, continued to develop his rendition of the competition dish, Poulet Au Vinaigre, or chicken with vinegar sauce. The dish is joined on the menu by Potage ala Garbure, or cabbage soup with foie gras and truffle coulis; Filets de Poisson en Ecailles Croustillantes, a potato-crusted onaga dish; Carre D’Agneau Caramelize, a honey-macadamia nut lamb dish; and pineapple beignet dessert, Baba ah Rum, by pastry chef Michelle Karr-Ueoka.
Proceeds benefit Bocuse d’Or USA Foundation, which is sending a team of chefs to Lyon, France, for the 2013 Bocuse d’Or world competition.
The dinner will be held at Alan Wong’s Honolulu restaurant, 1857 S. King St. Cost is $125, $165 with wine pairings. Call 949-2526.
