EASY HEALTHY PIZZA
1 pita bread
1/4 cup bilimbi pesto (see recipe below)
6 basil leaves
1/4 cup easy paneer cheese (see recipe below)
6 cherry, grape or other small tomatoes, halved
Preheat oven to 400 degrees. Place pita on parchment-lined baking sheet. Spread on bilimbi pesto. Top with basil, paneer cheese and tomatoes.
Bake for 10 minutes. Serves 1.
BILIMBI PESTO
1/2 pound bilimbi fruit (found at Frankie’s Nursery booth at Saturday’s Ala Moana Farmers Market and Asian markets)
1/4 cup roasted, unsalted cashew nuts
3 cloves garlic
1 cup arugula
1 tablespoon shredded Parmesan cheese
Place all of the ingredients in a blender or food processor and blend until smooth.
EASY PANEER CHEESE
1/2 gallon milk
1/4 cup lemon juice
Heat the milk on medium heat. When the milk starts to boil, add lemon juice and stir well.
When milk curdles, strain through cheesecloth and squeeze out excess liquid. Chill and serve.
