Chef Jason Peel, instructor of an advanced culinary course at Kapiolani Community College, demonstrates one of the gourmet dishes on the lineup for Ho’okipa Night 2014, the school’s annual fundraiser, on Wednesday’s episode of "What’s Cooking Hawaii" (7 p.m., KFVE; repeats 5 p.m. Sunday).
The recipe for Goat Cheese Balsamic Ravioli with Kula Strawberries is long and complicated. It includes, for instance, carbonating strawberries and creating a strawberry "air," or foam. It’s fun to watch in the making but perhaps overly ambitious for the average home cook.
This recipe is for one step in the process, baking a lemon cookie, which is crumbled and added to the dessert. But at home you can enjoy it on its own.
Lemon Shortbread
1/2 cup butter
1/4 cup sugar
1-1/4 cups flour
1/2 tablespoon lemon zest
1 tablespoon lemon juice
Preheat oven to 350 degrees. In mixer, cream butter and sugar. Add remaining ingredients.
Roll into log and chill until firm.
Cut into rounds and bake 10-15 minutes.

Ho’okipa Night 2014 takes place at 6:30 p.m. March 13, with cocktails at 5:30 p.m., at the Hawai’i Convention Center.
