At the Vegan Lunches to Go class April 12, students will make forbidden black rice and polenta casserole, grilled vegetable and quinoa salad, rainbow kale salad and wok-tossed cabbage salad.
On April 19, during the Luscious Vegan Desserts class, dessert lovers can feel good about preparing Tahitian Poe made with coconut milk and fresh tropical fruit, dairy-free Key Lime ice cream, chocolate mousse and blueberry cobbler made with rolled oats and brown-rice flour.
