‘Kansas City’ BBQ Baked Beans
1/2 cup prepared Kansas City-style barbecue sauce (or substitute favorite bottled sauce)
1/2 cup water
2 tablespoons tomato paste
1 tablespoon molasses
1/8 tablespoon sea salt
Pepper, to taste
1 tablespoon olive oil
1 medium Maui onion, chopped
2 cups chopped kale, leaves only
2 cups chopped Swiss chard, leaves only
9 ounces cooked chicken or turkey sausage links, cut in 1/2-inch rounds
2 (15-ounce) cans navy beans, rinsed and drained
In medium bowl, combine sauce, water, tomato paste, molasses, salt and pepper.
In saucepan over medium, heat oil. Add onion, kale and chard, and cook 3 to 5 minutes, until greens are wilted.
Add sausage and beans; cook another 3 to 5 minutes until heated through. Serves 6.

‘Jailhouse Rock’ Cupcakes
1-1/2 cups all-purpose flour
3/4 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, melted
2 cups mashed apple bananas
2 large eggs
1 teaspoon pure vanilla extract
» Frosting:
1 cup butter, room temperature
1 cup creamy peanut butter
4 cups powdered sugar, divided
1/4 cup milk
2 teaspoons vanilla
5 slices maple flavored bacon, cooked till crisp and crumbly
Heat oven to 350 degrees. Line standard 12-cup muffin pan with cupcake liners.
In medium bowl, whisk together flour, sugar, baking powder, baking soda and salt. Make well in the flour mixture and add remaining ingredients. Stir to incorporate.
Pour evenly into muffin pan. Bake 25-30 minutes. Remove from pan and cool completely on wire rack.
To make frosting, with hand-mixer, cream butter and peanut butter. Add half the sugar and blend until combined. Blend in milk, vanilla and remaining sugar, until smooth.
Frost cupcakes and top with bacon crumbles. Makes 12 cupcakes.

‘Love Potion number 9’ Grilled Oysters
6 tablespoons olive oil
2 tablespoons Maui onion, finely chopped
2 cloves garlic, minced
1/3 cup grapefruit segments, divided
2 tablespoons bell pepper, finely chopped
1 serrano chili, seeded and minced
1 tablespoon local honey
3 basil leaves, julienned
1 teaspoon finely chopped mint
1/4 teaspoon sea salt
8 fresh oysters, in shell
In saute pan on medium, heat oil and cook onion and garlic 3 minutes or until onions are translucent. Add half of grapefruit, bell pepper and chili; cook 30 seconds. Remove from heat; stir in honey, herbs and salt. Set aside.
Grill oysters, flat side up, over medium-high heat 4 to 6 minutes or until oysters begin to open. (Discard any oysters that do not open.)
Remove oysters from grill and remove top shell. With paring knife, loosen oysters from shell. Top each with grapefruit relish and remaining grapefruit segments. Serve immediately. Serves 8.
