Knife skills are featured as part of kitchen basics

During this third season of "What’s Cooking Hawaii?" host Grant Sato introduces a series of culinary boot-camp episodes that address cooking basics.

Wednesday, in the first of four such episodes, he covers basic knife skills, including the various types of knives, how to safely hold knives and food while cutting, basic knife movements and basic cuts. Among them are consistent cuts, bias cut, dicing, julienne cut, batonnet cut and how to clean and de-seed produce.

The segments are familiar territory for Sato, who is also a chef-instructor at Kapiolani Community College and a coach of the school’s culinary competition team.

On other episodes, Sato covers stock, baking and condiments.

"What’s Cooking Hawaii?" airs on KFVE at 7 p.m. Wednesdays and repeats at 5:30 p.m. Saturdays.
