Treat your family to a day at the beach and celebrate the 30th Annual Duke Kahanamoku Beach Challenge, a benefit for the Waikiki Community Center. The event runs 9 a.m. to 2 p.m. March 15 at Hilton Hawaiian Village, at Duke’s Beach and Lagoon. Proceeds support programs and services for Waikiki visitors and residents.

PORK AND MANGO SKEWERS
» 1/4 cup fresh orange juice
» 2 tablespoons fresh calamansi juice
» 2 tablespoons olive oil
» 2 teaspoons dark brown sugar
» 1 teaspoon Sriracha
» 1 teaspoon smoked paprika
» 2 medium cloves garlic, minced
» Pinch kosher salt
» 1 pound pork tenderloin, trimmed and cut in 1-inch cubes
» 2 medium ripe, firm mangoes, peeled, cut in 1-inch cubes
» 1 tablespoon chopped fresh cilantro
» 8 wooden skewers, soaked in water 30 minutes
In medium bowl, whisk orange juice, calamansi juice, oil, sugar, Sriracha, paprika, garlic and salt. Add pork and toss to coat. Cover with plastic wrap and marinate in refrigerator 1 to 4 hours.
Thread pork and mango onto skewers, beginning and ending with pork. Each skewer should have about 5 pieces of pork and 4 pieces of mango.
Place skewers on hot, cleaned and well-oiled grill. Cook on medium-high heat for about 8 minutes, turning once, until pork is cooked through and slightly browned.
Serve garnished with the cilantro. Serves 4.

TIKI BAR NUTS
» 8 slices of bacon, cooked crisp and cut into 1/2-inch strips
» 1 cup salted, roasted peanuts
» 1 cup salted, roasted almonds
» 1 cup sesame sticks (available at natural food stores)
» 1/2 cup chopped dried pineapple
» 1/2 cup chopped dried mango
» 2 tablespoons sesame seeds
» 1 tablespoon low-sodium soy sauce
» 1 tablespoon local honey
» 1/4 teaspoon cayenne pepper
Heat oven to 350 degrees. In bowl, toss all ingredients.
Spread on rimmed baking sheet and bake 20 minutes, stirring once, until honey is caramelized.
Let cool, stirring occasionally. Makes 5 cups.

MAI TAI MOCKTAIL
» 2 cups pineapple juice
» 1 cup fresh orange juice
» 1 cup club soda
» 1/4 cup sweetened cream of coconut
» 1-1/2 to 2 cups crushed ice
» 4 tablespoons grenadine (sweet and tart cocktail syrup, available at markets)
» 4 fresh pineapple wedges (5 to 6 inches long)
» 4 maraschino cherries
Chill ingredients before assembling drink.
In pitcher, combine ingredients; stir well. Pour into cocktail or specialty glasses. Garnish with pineapple wedge and maraschino cherry. Serve immediately. Makes 4 mocktails.
