The eighth annual Mauka to Makai Environmental Expo at Waikiki Aquarium on April 18 will showcase activities and programs that preserve and protect Hawaii’s environment, including a moi release, ocean animal sculpture exhibit and native plant giveaway. The event runs 9 a.m. to 2 p.m.
Food will be sold, and visitors should bring refillable bottles; free water stations will be available. Park at Waikiki Elementary School, 3710 Leahi Ave., and catch a free shuttle to the aquarium. Call the city’s Storm Water Public Outreach at 768-3248 or visit cleanwaterhonolulu.com.
Here are a few easy seafood recipes.
GLUTEN-FREE CRAB CAKES
» 8 ounces fresh lump crabmeat, shells removed
» 1 tablespoon minced garlic
» 1/4 cup chopped parsley
» 1 egg, lightly beaten
» 1 tablespoon low-fat sour cream
» 1 tablespoon Dijon mustard
» 1/2 teaspoon dried thyme
» Dash cayenne pepper, or to taste
» 1/2 cup almond flour
» Kosher salt, to taste
» 1 tablespoon butter for frying, divided
In medium bowl, use fork to combine crabmeat, garlic, parsley, egg, sour cream, mustard, thyme, cayenne and almond flour. Add salt to taste.
Form into four 1/2-inch-thick cakes. Place crab cakes on platter lined with wax paper. Cover loosely with plastic wrap and refrigerate for at least one hour.
Heat large nonstick skillet over medium heat, about 5 minutes. Add half of butter. Add crab cakes. Cook 4 to 5 minutes until browned. Add remaining butter, and carefully flip each crab cake with a wide spatula to cook on the other side, 4 to 5 more minutes. Serves 4.

‘CLAM BAKE’ PIZZA
» Cooking spray
» 1 (12-inch) pre-made thin pizza crust
» 2 (6.5-ounce) cans minced clams, rinsed and drained
» 3 teaspoons lemon juice
» 1 cup shredded Monterey Jack cheese
» 1/4 cup grated Parmesan cheese
» 1 clove garlic, minced
» 1 tablespoon fresh parsley, chopped
Heat oven to 450 degrees. Coat baking sheet with cooking oil spray.
In medium bowl, mix clams and lemon juice. Add cheeses and garlic. Spread on pizza crust, leaving 1-inch border.
Place pizza on baking sheet; bake 8 to 10 minutes, until crust is light brown and cheese is melted. Sprinkle with parsley. Serves 4.
