The YWCA of O‘ahu’s annual LeaderLuncheon recognizes female leaders who exemplify its mission of eliminating racism and empowering women. This year’s 38th event is from noon to 1:30 p.m. May 27 at Sheraton Waikiki Hotel & Resort.
Individualickets are $150; tables range from $3,000 to $10,000. Parking at the hotel is $8 or $15 valet.

This week we’re featuring favorite recipes of women who have contributed to the success of the YWCA.
FINNISH BEEF SOUP

» 1 pound ground beef
» 1 large onion, diced
» 4 stalks celery, chopped
» 3 carrots, cubed
» 2 potatoes, cubed
» 1 (9-ounce) package prepared vegetable soup mix
» 1 teaspoon salt, or to taste
» 1/2 teaspoon pepper
» 8 cups water
In medium-size pot, brown ground beef and drain fat. Add remaining ingredients and cook 15 minutes or until vegetables are tender. Serves 8.
Variation: Substitute vegetables with any veggies of your choice.
Approximate nutritional information, per serving (includes 1 teaspoon salt): 300 calories, 6 g fat, 2.5 g saturated fat, 35 mg cholesterol, 500 mg sodium, 41 g carbohydrate, 7 g fiber, 5 g sugar, 20 g protein
MANGO SALSA

» 1 (30-ounce) can whole tomatoes, chopped, with juice
» 2 large bunches cilantro, chopped
» 1-1/2 teaspoons Hawaiian salt, or to taste
» 6 large fresh tomatoes, diced
» 1 bunch green onions, chopped
» 1 whole sweet Maui onion, chopped
» 1 (4-ounce) can chopped jalapenos, including juice
» 1 cup firm ripe mangoes (Hayden variety recommended), peeled and diced
In large bowl, mix all ingredients. Chill 1 hour.
Serve with tortilla or pita chips. Makes about 12 cups.
