It was my good fortune that a week before my arrival in Peru, the 2015 list of 50 Best Restaurants in South America was released. Nine of those establish­ments, chosen by an “academy” of more than 250 experts on the Latin American restaurant scene, are in Lima. My greater fortune was that I snagged a reservation at one of them.
