Honolulu chef Lee Anne Wong’s Asian take on quail won one of three prizes earlier this month in the Chefs Taste Challenge, part of the Farm to Table Experience produced by the New Orleans Ernest N. Morial Convention Center.
Wong’s entry of Thai-style fried quail and Hawaii heart of palm with Mayhaw chili glaze won the runner-up award, behind chef Eric Cook of The American Sector Restaurant+Bar in New Orleans. His dish featured white gulf shrimp and Texas green squash cassoulet, and included praline rum.
The fan favorite prize went to chef Henry Chandler of Henry’s Louisiana Grill in Georgia. His dish featured braised beef with mushroom and chickpea saffron risotto.
The competition ran Aug. 18 to 20, with 10 chefs competing at the event.
