Joseph Almoguera has been named executive chef at the Prince Waikiki, overseeing all three of the resort’s restaurants — 100 Sails Restaurant & Bar, Hinana Bar and the Bird of Paradise Restaurant at the Hawaii Prince Golf Club.
Almoguera has been with the resort since 2013, and helped launch 100 Sails in 2016.
Almoguera, born and raised on Guam, has had a 20-year culinary career, most of it in hotel kitchens.
BOILING UP A MARDI GRAS MEAL
12th Ave Grill is celebrating Mardi Gras on Sunday with a Cajun seafood boil of Penn cove mussels, clams, white shrimp, Kahuku corn and new potatoes, with fried okra and hush puppies on the side and Manoa Chocolate Beignets for dessert.

SANSEI’S CRISPY DISH MAKES IT TO TV
A longtime dish of Sansei Seafood Restaurant & Sushi Bar — it’s been on the menu since the first location opened in 1996 on Maui — has made the lineup on an upcoming episode of the Cooking Channel’s “Best Thing I Ever Ate.”
The show, themed “Extra Crispy,” features select crunchy dishes from around the country, and fans of the restaurant will likely know just which Sansei dish was picked. (Hint: It features ahi.) Chef Keith Endo appears on the show to prepare it.
The episode airs 4 p.m. Monday and repeats at 8 p.m. on the Cooking Channel.
MORIMOTO TO SIGN COOKBOOKS
Fans of Iron Chef Masaharu Morimoto will want to hurry and book a spot for a special book signing at Williams-Sonoma at Ala Moana Center from 1 to 2 p.m. Sunday.
Morimoto will sign his “Mastering the Art of Japanese Home Cooking,” a collection of healthful and simple Japanese dishes.

WINE DINNER HIGHLIGHTS FILIPINO MENU
The Third Thursday wine-pairing dinner this month at Bread & Butter focuses on Filipino cuisine. Chef Arnaldo “Masa” Gushiken’s five-course menu Feb. 15 centers on an entree of lamb adobo with pomegranate pearls, artichoke frito and calamansi, served with a 2013 Hartford Russian River Zinfandel. Dessert will be a deconstructed banana lumpia with cinnamon cookies and ice cream.
