“Untapped Crafts” is the theme of chef David Lukela’s five-course menu, each dish paired to a BeerWorks brew: scallop poke (with Kewalo’s Cream Ale), fried quail on sushi rice (Kitty Bites Back), oxtail pipikaula (Coco Heff), Kurobuta pork over fried saimin (Point Panic IPA) and stout ice cream (South Shore Stout).

SHOW STUDIES PROHIBITION’S LEGACY
America’s 13-year ban on alcohol is the focus of the Smithsonian Channel’s two-week special, “Drinks, Crime and Prohibition,” debuting Monday.
The series, the network says, “takes a deep dive into the underbelly of a time characterized as much by jazz, illegal booze and female liberation as it was by gangsters and brutality,” incorporating not just historians, but also mixologists and weapons experts.
Prohibition, enacted in 1920 and repealed in 1933, has left traces in American society more than 100 years later, the network says, from organized crime to a resurgence of cocktails born in the speakeasies.
The show airs at 2 p.m. Mondays on Hawaiian Telcom 244, and 5 p.m. on Oceanic Time Warner Digital 339 and 1339. The show repeats several times, with the second episode airing June 18.
SALAD SHOP ON EXPANSION PATH
Maui’s Fork & Salad has opened a second location just two years after its launch in Kihei, and has signed on with a franchise developer to expand beyond the islands.
The shop was founded by chefs Jaron Blosser, Cody Christopher and Travis Morrin in 2016 in the Azeka Mauka shopping center as a takeout spot for salads and sandwiches featuring more than 50 local ingredients.
Customers can order off a menu or build their own meals.
The new location, in the Pu‘unene Shopping Center in Kahului, opened Friday. Hours are 10:30 a.m. to 9 p.m. daily; ordering may be done through the Fork & Salad app.
