The newest Foodland market, opening today, is less supermarket, more grocery boutique.
Kahala Mkt., across Waialae Avenue from Kahala Mall, is less than half the size of the chain’s last two additions — Foodland Farms stores in Kapolei and Pearl City. That has meant compiling a carefully chosen mix of essentials and gourmet products, Keoni Chang, the chain’s chief food officer, said during a media preview on Friday.
It is also heavy on prepared foods, including grab-and-go meals, salads, sandwiches, soups and breakfast items like overnight oats and protein drinks, made in-house, as well as an expanded Chef Essentials line of marinades, stocks, spice mixes and other building blocks of home-cooking.
A build-your-own-plate station and pizza counter offer made-to-order hot items to go. A taste: 12-inch pizzas may be ordered whole or by the half, which allows for mixing and matching, say, truffle wild mushrooms with roasted kabocha and brown butter.
An elegant corner is set aside for R. Field Wine Co., with a segregated wine room for the most high-end labels.
An in-market restaurant, called et al., is overseen by chef Colin Sato, formerly of the Beachhouse at the Moana.
“We want this to be a neighborhood spot,” Chang said, a place to bring friends, family, “et al. — and others.” He describes the menu as “high-level but casual, loosely tagged ‘new American.’”
To minimize lines for the first few days, the store is offering reserved shopping times through Sunday, available at kahalamkt.com. Hours are 6 a.m. to 9 p.m. daily for the market and restaurant. Call 732-2440.
