As a restaurant operator for many years in Honolulu, I read about the roof collapse that occurred at Happy Days Chinese Seafood Restaurant with great sadness. When a restaurant has to close, many employees, their families and customers are adversely affected.
When the Department of Health inspects an operating restaurant, there are several metrics of public food safety measured. If a restaurant is found to have discrepancies, it is then “red carded” by DOH and may not operate until the discrepancy is corrected. This is done to ensure proper food handling so that the public may safely enjoy that restaurant.
That the DOH has not acted to guarantee complete clearing, cleaning and sanitation at Happy Days and secure the food-borne pathogens is negligent to say the least, especially considering the surrounding businesses that rely on a safe and odor-free operating environment. Red card for DOH, please.
