As the second season of "What’s Cooking Hawaii" (7 p.m. Wednesday, KFVE) nears its end, host Grant Sato welcomes Julie Morihara and students from her culinary program at James Campbell High School. They prepare Kalua Pig Wonton with Pineapple-Tomato Salsa, an award-winning dish created several years ago by a Campbell student.
Next week’s installment of the Kapiolani Community College cooking show concludes the season.
KALUA PIG WON TON WITH PINEAPPLE-TOMATO SALSA
3/4 cup kalua pig
1/4 cup minced onion
1/4 cup chopped spinach (fresh or frozen)
Salt and pepper, to taste
2 egg whites
16 wonton wrappers
1 cup oil
» Pineapple-Tomato Salsa:
1 cup diced tomato
1/2 cup diced pineapple
1/4 cup diced onion
1/4 cup sliced green onions
Salt, to taste
» Onion dressing:
1/2 cup diced onion
1/2 cup apple cider vinegar
1/2 cup sugar
1/4 cup mustard
1 tablespoon salt
1/4 teaspoon black pepper
2 cups salad oil
In frying pan, saute pork, onions and spinach, season with salt and pepper to taste. Lay wonton wrapper on flat surface; place 1 teaspoon pork mixture in center. Brush egg white around edge of wrapper and fold. Seal completely. Repeat with rest of wrappers and filling.
Preheat frying pan and add oil. Place won ton in pan and fry until golden brown.
Meanwhile, make salsa: In mixing bowl, combine tomato, pineapple and onions, and season with salt to taste.
For onion dressing, place all ingredients except oil in blender; blend well. Slowly add in oil and blend well.
To serve, place wonton on platter. Top with salsa and drizzle with onion dressing. Makes 16 wontons.
