Now that we’re aware of how fish oils contribute to our health, salmon is an especially popular fish to cook. In Hawaii, one common way to prepare it is with mayonnaise and furikake, Japanese flavored seaweed flakes.
Here is an even tastier preparation from Aileen Fuke of Hilo. She spreads mayonnaise on the fish then tops it with chopped tomatoes and bacon.
The saltiness and smokiness of the bacon go well with the fresh sweetness of tomatoes, and the contrasting colors of the pink salmon, red tomatoes and brown bacon make it an attractive dish as well. Add a green garnish such as fresh dill for an additional spot of color.
Within 30 minutes you can have a beautiful and tasty main course, and since the tomatoes and bacon are already cut, it is easy to serve.

BAKED SALMON WITH TOMATOES AND BACON

- 4 pieces bacon, cut into 1/4-inch strips
- 3/4 pound salmon fillet
- 2 tablespoons mayonnaise
- 1/2 teaspoon pepper
- 1/2 cup chopped tomatoes
- Chopped green onions or fresh dill, for garnish (optional)
Heat oven to 325 degrees. Line a rimmed baking pan with foil.
In a skillet over medium heat, brown bacon until crisp. Drain on paper towels. Save bacon grease for a later use, such as sauteing vegetables.
Place salmon fillet on prepared pan, skin side down. Use tweezer to pull out any bones. Coat top evenly with mayonnaise. Sprinkle with pepper. Cover with tomatoes, then bacon. Bake uncovered 10 to 12 minutes.
Garnish with a green onions or dill. Serve hot or at room temperature. Serves 2 to 3.
Variations:
>> Use olive-oil mayonnaise or reduced-fat mayonnaise if you are watching your calories.
>> Serve with a wedge of lemon.
>> For a spicy variation, top with pickled jalapenos before baking.
