If friends drop by unexpectedly and you aren’t prepared, you can still be the hostess-with-the-mostest by making the Easiest Meatballs Ever.
These meatballs, with an addictive tangy barbecue sauce, are among the very best hors d’oeuvres.
Use readily available frozen meatballs of any kind — turkey, chicken, pork or beef. The tasty sauce is made with two ingredients probably in your refrigerator — barbecue sauce and grape jelly. Yes, you read it right — grape jelly.
Do not use a soy-based sauce like teriyaki. Buy a mainland-style, tomato-based barbecue sauce.
The sweetness from the grape jelly blends perfectly with a slightly spicy barbecue sauce. Simmering the meatballs in this simple mixture creates a sheen on the bites of meat.
In the few minutes it takes to warm the meatballs, you will have a perfect snack for your expected guests. Use toothpicks to make eating fun.
Don’t be surprised when your friends ask you for the recipe!
EASIEST MEATBALLS EVER
By Lynette Lo Tom
- 24 frozen meatballs, any variety, defrosted (see note)
- 3/4 cup barbecue sauce
- 1/2 cup grape jelly
Combine ingredients in saucepan over medium heat. Cook until meatballs are warmed through and jelly is melted, about 10-15 minutes.
Serve with toothpicks. Serves 6-8 as an appetizer.
>> NOTE: If you don’t have time to defrost the meatballs in the refrigerator you can defrost them quickly in the microwave or add them frozen, after bringing the sauce to a simmer. Frozen meatballs will take a few more minutes (or longer) to heat through.
