Country fair recipes are taste of things to come

This year’s Waimanalo Country Fair features a circus troupe, live music and a celebrity dunking booth.

When: 6:30 p.m. to midnight Friday, noon to midnight Saturday and noon to 10 p.m. Sunday

Where: Waimanalo Beach Park

Admission: Free

But for food lovers, the highlight will be the savory sampling of local cuisine, including favorites such as hamburger steak, fried noodles and homemade malasadas.

To get taste buds ready for the weekend, festival organizers share some of these delicious recipes.

Time 2 Grind’s Hamburger Steak

» Hamburger:
3 eggs
1 tablespoon salt
1 tablespoon pepper
2 slices bread
3 pounds ground beef

» Gravy:
1/2 cup butter (1 stick)
1 cup flour
1/3 cup soy sauce
1/2 cup hamburger drippings
1 cup water
1 teaspoon salt
1/2 teaspoon black pepper

To make hamburger: In a bowl, whisk eggs, salt and pepper. Tear bread into large pieces and place in bowl. Let bread soak into the egg mixture until fully absorbed.

Mix in ground beef and form into 9 patties.

Heat large heavy skillet over medium-high heat, and fry hamburger patties until meat is no longer pink in the center, about 8 minutes per side.

Place cooked hamburger patties on paper towels and set aside. Reserve drippings from skillet.

For gravy, melt butter in sauce pan over medium-low. Add flour, stirring until combined and golden brown in color (about 3 to 5 minutes).

Slowly whisk in soy sauce, drippings, water and salt and pepper until mixture thickens.

Place patties back into skillet, cover with gravy and bring to boil over medium-high heat.

Reduce heat to a simmer and cook about 20 minutes.

Serve over hot rice or add a fried egg on top to make a loco moco. Serves 9.

Grilled Corn on the Cob with Homemade Seasoned Salt

4 ears fresh corn on the cob, silks removed, husks left on, and soaked in cold water for 20 minutes
4 tablespoons butter or margarine, softened
Seasoned Salt (see recipe below)

Heat grill to high. Remove corn from water and place on grill. Close cover and grill corn for a total of 20 minutes, turning the husks once.

Remove corn from grill and let cool for 3 to 5 minutes.

Pull back husks and spread with butter. Sprinkle with seasoned salt, to taste. Serves 4.

Approximate nutritional information, per serving (based on 4 large ears and not including salt to taste): 220 calories, 13 g fat, 7 g saturated fat, 30 mg cholesterol, 100 mg sodium, 27 g carbohydrate, 4 g fiber, 5 g sugar, 5 g protein

Seasoned Salt

1/3 cup kosher salt
2 tablespoons paprika
2 tablespoons ground black pepper
2 tablespoons dried oregano
2 tablespoons dried thyme leaves
1 tablespoon finely chopped dried bay leaves
1 tablespoon cayenne pepper (optional)

Mix all ingredients together. Store in an airtight container. Makes about 3/4 cup.

Note: Seasoned salt can be used as an all-purpose spice blend to season chicken, beef, fish and more.
