When Mike Chung worked at the Manoa Fire Station, one of his favorite easy, easy dinners to make for the crew was a whole roast chicken. Now retired, the former fire captain still makes his recipe.
He uses just two ingredients: a chicken and a Noh Foods of Hawaii seasoning mix, either the Chinese- style roast duck or roast chicken.
In the morning, he coats the chicken in the dry mixture, then refrigerates it all day. He’ll roast the chicken for dinner, serving it with a cooked vegetable and steamed rice.
“Just wait until you try the roast duck seasoning,” he says. “The chicken tastes like duck!”
EASY CHINESE ROAST CHICKEN

- 1 (3- to 5-pound) whole chicken
- 1 to 2 (1.125-ounce) packets Noh Foods of Hawaii roast chicken or roast duck seasoning mix
Clean chicken. Rub 1 or 2 packets seasoning mix (depending on size of bird) outside and in cavity of chicken.
Place in roasting pan, cover with plastic wrap and refrigerate 8 hours or overnight. Keep chicken in a plastic bag if you do not have room for the whole pan in the refrigerator.
Remove chicken from fridge and let sit at room temperature for an hour.
Heat oven to 350 degrees. Cover chicken with foil; roast 1 hour.
Remove foil; roast 20 minutes to brown skin, until internal thermometer reads 180 degrees.
Let rest 10 minutes, then cut into pieces. Serves 4 to 6.
