16 teaspoons butter
16 1-ounce slices ham, Canadian bacon or turkey
16 poached eggs
Hollandaise sauce (below)
Split, toast and butter English muffins.
Top each half with slice of ham, Canadian bacon or turkey; poached egg; and a generous spoonful of Hollandaise sauce.
Sprinkle with paprika and parsley. Serves 8.

4 egg yolks
2 tablespoons tarragon vinegar
1/2 teaspoon lemon juice
1/8 teaspoon salt
Dash of pepper
1/2 pound butter, melted
In bowl, beat egg yolks until thick and lemon colored. Add vinegar, lemon juice, salt and pepper. Place bowl over hot (not boiling) water and beat until thick, about 10 minutes. Add butter slowly, beating constantly. Serves 8.
