Japengo chef Jon Matsubara and chef Isaac Bancaco of Ka’ana Kitchen Andaz Maui at Wailea will appear on NBC’s “Today” show Wednesday to promote Hawaiian flavors and cooking, according to Hyatt Regency Waikiki Beach Resort and Spa, the site of Japengo.

The duo will demonstrate how to prepare Hawaiian Luau Carnitas with steamed buns, pineapple salsa, pickled Maui onion and feta, and will show dishes of watermelon salad with goat cheese and spiced macadamia nuts, and grilled Hawaiian shrimp with summer fruit salad and pickled cranberry vinaigrette dressing.

Matsubara moved last year to Japengo from Azure restaurant in the Royal Hawaiian Hotel. Prior to that, he was executive chef at Stage Restaurant. He began his culinary career at Roy’s and worked in such New York restaurants as Restaurant Jean Georges, Tabla and Bouley.

In Hawaii, Matsubara also spent time in the kitchens at Alan Wong’s and the Canoe House in the Mauna Lani Bay Hotel.

Maui-born Bancaco attended the Western Culinary Institute in Portland, Ore., and interned at the Blue Ginger, chef Ming Tsai’s Massachusetts restaurant. He worked for Roy’s in Los Angeles, then returned to Maui as chef de cuisine of the Grand Wailea Resort’s Humuhumunukunukuapua’a restaurant.

When Andaz Maui opened last year, Bancaco became chef de cuisine of Ka’ana Kitchen.
