Dave “DK” Kodama will expand his Sansei Seafood Restaurant & Sushi Bar to Seattle this year.

Kodama hopes to open “before the holidays, in November,” he told the Honolulu Star-Advertiser, conceding that restaurant opening dates often are moving targets.

Kodama had been looking to expand the concept for about eight years, waiting to find the right combination of location and timing, he said.

The chef is excited to work with the different types of seafood native to the Seattle area including halibut, geoduck and fresh salmon.

“The salmon will be incredible,” he said, noting that while Hawaii gets fresh salmon, the Pacific Northwest has different varieties “that they don’t ship out.”

The space is brand new, designed to be a restaurant, which Kodama’s DK Restaurants will out fit with everything from kitchen equipment to silverware.
